This easy and delicious salsa is a showstopper! My wife and I bring it to family gatherings and itís been a hit every time. Itís a wonderful way to dive into some fresh veggies. Pico De Gallo serves well as a dip at parties or it can make a great taco filling.
Preparation Time: 20 minutes
Makes: 4 to 10 people
2 Ĺ cups of roma tomatoes (approximately 7 tomatoes)
1 cup of white onion
Ĺ cup of fresh cilantro
2 Ĺ tbs of pickled jalapenos
3 garlic gloves
1tbs extra virgin olive oil
Ĺ tsp salt
Dice roma tomatoes and white onion. Place in a mixing bowl.
Pluck cilantro leaves from the stems. Finely chop cilantro heads, discard stems. Add chopped cilantro to the tomatoes and onion.
Finely chop garlic or crush the garlic in a garlic press. Add to mixing bowl.
Puree jalapenos and add to mixing bowl.
Add oil and salt, then mix.
For best results, allow to cool in the refrigerator for at least thirty minutes.
