Pineapple and coconut pina colada sorbet

This Pineapple and coconut pina colada sorbet with shredded coconut will take your taste buds on a tropical food journey. Beat the heat and cool down with this easy lactose free treat. Serve with fresh cut pineapple for the kids or add white rum to make an adults only icy treat for dessert.

Preparation Time: 10 minutes plus 6 hours to set
Cooking Time: 6 hours or until set
Serves: 6

1 ripe pineapple or 500g frozen pineapple
400 ml coconut milk (lite)
White rum (if desired)
Shredded coconut

Pineapple and coconut pina colada sorbet ingredients

Place pineapple and coconut milk into a blender and purée until smooth.
Add white rum for an adults only version.

The kids will love the fresh pineapple and shredded coconut on this sorbet

Pour mixture into rectangular tray.
Freeze 6 hours or until set.
Take out of freeze for 10 minutes before serving to soften. Sprinkle with shredded coconut and serve.

Use frozen pineapple for quicker freezing time.
Add white rum for an adults only version.
