Pineapple Chicken Curry

Curries are wonderful to eat, especially when it starts getting cooler. This Asian inspired chicken curry is sweet, spicy and satisfying.

Preparation Time: 25 minutes
Cooking Time: 40 minutes
Serves: 3 - 4



Ingredients
3 chicken thighs cubed
1 capsicum sliced
1 small zucchini diced
1 small carrot peeled and diced
250 grams sweet potato diced
1 small onion diced
3/4 cup coconut cream
1 cup chicken stock
2 tablespoons fish sauce
2 teaspoons ground coriander
1 teaspoon each ground cumin, turmeric and ginger
1/2 teaspoon ground cinnamon
1 small can of pineapple pieces in juice
2 cloves garlic crushed
1 - 2 tablespoons brown sugar to taste
2 - 4 finely chopped chillies to taste
1 tablespoon oil

Method
Drain the pineapple and set aside a 1/4 cup of the juice.
In a large wok or pot, heat the oil to a high heat. Brown the chicken, then put in the capsicum and onion, saute for 2 minutes until softened.



Pineapple Chicken Curry


Add the garlic, chilli and spices and cook until fragrant.
Turn the heat down to low. Add the pineapple juice along with all the remaining ingredients, apart from the zucchini and pineapple pieces. Stir, then simmer gently for 20 minutes.
Put in the zucchini and pineapple pieces, cook for a further 10 minutes.



Pineapple Chicken Curry


Adjust any seasoning then serve with steamed rice.
