This is a new twist on an apple crumble. Poached Apple stuffed with a crumble topping, drizzled with melted chocolate and served with a scoop of coconut, vanilla and nutmeg ice cream. It's so simple and looks amazing.
Ingredients 4 Granny Smith apples
2 teaspoons of cinnamon
4 tablespoons of raw sugar
4 tablespoons of chocolate buttons
1/4 cup plain flour
1/8 cup brown sugar firmly packed
1/4 cup rolled oats
1/4 cup shredded coconut
60 g butter
4 scoops of Coyo brand vanilla nutmeg coconut ice cream (or other ice cream alternative)
Preheat your oven to 180 degrees celcius.
Add to a bowl the brown sugar, oats, flour, coconut, 1 teaspoon of cinnamon and butter.
With your fingers, rub the ingredients together to combine.
Spread mixture out on to a lined baking dish.
Bake for 30 minutes.
Crumble topping when cooked
Peel and core the apples, or if you have an apple slinky device those work great to peel and core the apple.
Apple Slinky device
Place apples into a medium saucepan with one teaspoon of cinnamon and the raw sugar.
Fill the saucepan with boiling water until just covered.
Cook on high for about 3 minutes or until apples are just soft but not becoming mushy.

Lift apples out of the saucepan and drain on a plate.
In a microwave safe dish add the chocolate buttons and heat on high for about one minute or until the chocolate has started to melt.
Mix chocolate with a spoon to make sure it has completely melted and now you're ready to plate up.
Place one apple in the centre of each bowl.
Spoon some of the crumble mixture into the centre of the apples.
Drizzle some chocolate around the bowl and then sprinkle on a little more crumble topping.
