Pork Laarb

A light and fresh dish using minced meat (any meat would suit this recipe). This recipe does not use oil at all so it is a good choice for a low-fat diet.



Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 5 servings

Ingredients
1 kg minced pork (or other meat)
2 limes, juiced
1 lemon, juiced
3 tablespoons fish sauce
1/2 tablespoon sugar
1 tablespoon ground rice
2 red chillies, chopped
1 red onion, sliced
2 tomatoes, diced
1/2 bunch mint leaves, leaves only

Ground rice is available from Thai grocery stores or you can make it your own. Dry grill raw rice on a non-stick pan until brownish. Grind in food processor until it becomes powder.

Method
Boil 1.5 L of water in a pan.
Boil the pork minced until cooked through.
Turn off heat, drain the minced pork and put in a big bowl.
Add lemon and lime juice, fish sauce, sugar, ground rice, red onion, tomatoes and mint leave into the bowl
Combine well, ready to be served.

Tastes great served with Som Tum, a green mango and carrot salad.
