This is a staple filipino dish and is usually served at breakfast but we tend to eat this at any time of the day - breakfast or lunch.

Makes: 4 servings
1kg lean porkshoulder sliced into steaks 1/2 inch thick
1 cup sugar
2 tablespoons salt
1-2 tablespoon garlic powder
2 to 3 drops red food coloring
1 tablespoon oil for cooking
Mix sugar, salt, garlic and red food coloring. Cover the pork with this mixture until pork is full covered.
Store in fridge to marinate overnight
In a pan, place pork including any left over marinade and enough water to cover. Simmer over medium heat until the pork is cooked through - just ensure you are adding any water as needed (this burns easily).
When the pork is tender and cooked through, add the oil and (on medium heat) and continue to cook until meat caramelises.
Serve with fish sauce/soy sauce, rice and fried eggs.
