Potato and Bacon Beignets

Beignets (pronounced Ben-yay is a French word for a potato dumpling. These are a fun snack to serve at a cocktail party, or just 2 or 3 on the side with a nice big juicy steak and some veggies. These are great for making in advance and storing in the fridge until you're ready to fry.



Beignets
Delicious beignets with herb mayo on the side


Preparation Time: 20 minutes
Cooking Time: 3 minutes
Makes: 10-20 depending on wether or not you make small or large ones

Ingredients
For Beignets
2 large potatoes
1/2 diced brown onion
1/2 cup of diced bacon
1/4 cup of mozzarella cheese
1/2 cup of flour
1 egg yolk
1 beaten egg
1/4 cup of bread crumbs
1 tablespoon milk
1 tablespoon of butter

For herb mayonnaise
1 jar of egg mayonnaise
2 teaspoons of dried mixed herbs
Or 2 tablespoons of fresh chopped herbs of your choice

Method
For the beignets
Peel and cut potatoes, and cook until tender.
Drain and mash potatoes adding in milk and butter
While potato is cooling cook onion and bacon in a fry pan.
When onion is tender place on paper towel to reduce excess oil and leave for 5 minutes.
Bacon and onion will be slightly cooled and you can add it to the mash and mix through.
Add in 1/4 cup of cheese, the egg yolk, 1/4 of a cup of flour, reserving the rest for crumbing and mix through to combine making sure mix is really firm.
If mix is too soft add in flour, 1 tablespoon at a time until desired firmness is reached.
Roll mixture into balls and the beignets can be cooked as is, or you can crumb them.
For crumbing follow the basic crumbing procedure flour in one bowl, beaten egg in the next, and finally breadcrumbs.
Coat each one in that order; flour, eggs then crumbs
If making in advance place in the fridge
Heat fry pan to medium high heat filled 1/2 way or use a deep fryer if you have one
Fry beignets in fry pan until just golden turning occasionally so they cook on both sides and don't burn.
When you think it's ready cut one in half and check if it's cooked.
Serve on the side with some herb mayonnaise.

To make herb mayonnaise
Add chopped or dried herbs to 4 tablespoons of mayonnaise mix through and serve on the side in a ramekin, make more as needed.
