Potato Bake

This cheesy potato bake with bacon and tomatoes, makes for a comforting family meal after a hard day, and can be served on its own or with a selection of vegetables. Based on the brands I used, each portion should be about 162 calories.

Preparation Time: 35 minutes
Cooking Time: 1hr 10 minutes
Makes: 8 servings

Ingredients
1kg baby potatoes
15g brown onion
200g tomatoes
100g red bell pepper
60g extra lean back bacon
100g soya yoghurt
1 tbsp balsamic vinegar
1 tsp parsley
40g Red Leicester
100g sweetcorn

Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/375 ༠F/5 Gas.
Boil potatoes for fifteen minutes, while steaming the sweetcorn over the top.
Fry the bacon, then chop.
Chop the onion, the blend together with tomatoes, pepper, yoghurt, and vinegar.
Cook the mixture in a sauce pan.
Chop the potatoes into a dish, and mix with the sweetcorn, and yoghurt mixture.
Grate the cheese, and sprinkle over the top along with the parsley.
