Potato Pudding

Here's something to confuse your taste buds. The mix of sweet and savoury is unusual at first, but also very pleasant. It is a bit like bread and butter pudding, but replacing the bread with spuds. Based on the brands I used, this sugar and dairy-free pudding should be 278 calories per portion.

Preparation Time: 35 minutes
Cooking Time: 45 minutes
Makes: 4 servings

Ingredients
200g baby potatoes
50g Californian seedless raisins
100g soya butter
125ml soya milk
1 orange
1 tsp lemon juice
2 tbsp clear wildflower honey
2 large eggs

Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/375 ༠F/5 Gas.
Peel, boil, and chop your potatoes, then layer the in a roasting dish.
Cream the butter and beat in the eggs.
Mix the milk, honey, and raisins, and stir in.
Pour the mixture over your potatoes, and stir in.
Zest the orange, mix with the lemon juice, and sprinkle over the top.
Cook for 45 minutes in the oven.
