Prawn Stock

This prawn stock can be used for fish curries, casseroles or soups. It adds flavour to any seafood dish.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 1 litre

Ingredients
200g prawn heads & shells
6 cups of water
1 tsp fish sauce
1 onion
1 tsp garlic
oil
pepper & salt

Method
Put the heads and shells into a large saucepan and fry off in oil.



Roughly chop the onions and saute in the pan.
When the heads have tuned pink, add the fish sauce, garlic, pepper & salt and water.
Bring to the boil and then simmer for 30mins.
The liquid will reduce, leaving a rich and flavoursome stock.



Strain the stock, removing the prawn heads, shells & onions.
Freeze until ready to use.
