Citrus Hummus

This is an absolutely healthy and delicious version of Hummus - making your own, rather than store bought is not only incredible value, but an opportunity to tailor it to the flavour balance YOU enjoy!

Preparation Time: 15 minutes
Cooking Time: 0 minutes

400g tin of chickpeas (washed thoroughly and drained)
1 tsp olive oil
Juice of 1&1/2 - 2 lemons (depending on your taste)
1/2 tsp cumin
1&1/2 tsp crushed garlic
black pepper to taste

process chickpeas, oil and lemon together in a food processor.
add cumin, garlic and pepper and process again to combine.
taste and if too much lemon, add more olive oil! Use this step to adjuce the flavours to your palette if wanted.
Serve with chopped vegetables, chips, pita bread, as part of a greek salad plate, with falafels, yiros, in wraps- anything!!
