White Chocolate and Raspberry Muffins

These muffins are simple, delicious and quick to make. Only one bowl needed.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 18

3 cups self raising flour, sifted
1 cup caster sugar
1 cup milk
1/2 cup cream
1 tsp vanilla essence
125g butter, melted
1 egg
125g white chocolate chips
200g frozen raspberries


Preheat oven to 200 degrees Celsius.

Place dry ingredients in bowl.

Melt butter in microwave safe bowl.

Add all ingredients except the raspberries.

Mix well.

Gently fold in frozen raspberries (if you over mix, the raspberries won't hold their shape).

Bake for 20 minutes or until a skewer inserted into the centre of a muffin comes out clean.

Drizzle with melted white chocolate if desired.
