Morrocan Spiced Eggplant

Eggplant is a very juicy vegetable and perfect for stew. Try this easy eggplant stew recipe with moroccan spices.

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 4 servings

1 large-sized eggplant, diced
3 tomatoes, chopped
1 brown onion, diced
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon garlic powder
1 tablespoon ground sweet paprika
1 tablespoon sugar
salt and black pepper

Soak the diced eggplants in cold salted water for 10 minutes, to get rid of the bitterness. Drain.

Heat 2 tablespoons of olive oil in a large frying pan, add in the brown onion and saute until they are soft and caramelised.

Add in the diced eggplants and saute for 10 minutes until they are slightly tender. Add in the ground cumin, ground coriander, garlic powder and ground sweet paprika.

Continue sauteing for further 10 minutes until the eggplants are cooked and soft.

Add in the chopped tomatoes and sugar. Mix and cook until tomatoes are soft.

Season with salt and black pepper. Serve while warm.
