Howdy Partner Chowder

I grew up around a lot of Americans. If they have one thing going for them, it may just be this belly-filling meal that combines a whole bunch of fresh produce into a crowd-pleaser that's tasty, easy to make and easy on the budget. Enjoy!

Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 4 servings

3 large potatoes
1 brown onion
3 sweetcorn cobs OR 1 can of sweetcorn
200g bacon
2 T oil
1 T plain flour
250mL milk
200mL water
(optional) cheese to top

Peel & chop the potatoes into 1cm pieces, dice the onion and use a sharp knife to remove corn kernels from the cobs.

Heat the oil in a large pot or saucepan and cook the onion for 1 minute.

Add the potato and corn and cook, stirring, for 5 8 minutes.

Add the flour and stir well to coat. Season with a pinch of salt.

Add milk and water bring to the boil then simmer, stirring regularly, for 15 30 minutes or until the vegetables are soft. Turn off the heat and give it a vigorous stir, using the spoon to slightly smash the potatoes.

Meanwhile, cook the bacon in a separate frypan.

Divide chowder amongst bowls and top with the bacon and, if your heart desires, some cheese or cracked pepper.

Serve with toasted crusty bread.
