Blueberry & Cinnamon Scones

Not your ordinary scones, these scones are filled with blueberry and cinnamon flavours that can spice up any breakfast or tea. Serve them warm with your favourite coffee or tea.They are easy to make and provides an alternative to the traditional buttermilk scone recipes.

Cooking Time: 15 minutes
Makes: 10-12 servings

11/2 cup self-raising flour
1 tbsp caster sugar
30g butter, chopped
Pinch of salt
3/4 cup buttermilk
1 1/2 tsp ground cinnamon
1/2 cup frozen blueberries
2 tsp vanilla essence

Preheat oven to 200C, line a baking tray.

Place the flour, sugar and a pinch of salt in a large bowl.

Sift in the ground cinnamon and add the butter. Using fingertips rub in the butter until it resembles fine breadcrumbs.

Make a well in the centre and add in buttermilk and vanilla essence.

Using a spatula, gently stir until a soft dough forms.

Stir in the blueberries.

Transfer to a lightly floured surface and knead gently until the dough comes together.

Roll out into a 3 centimetre thick log.

Using round cutters, cut the scones out. Repeat until all the dough is used up.

Transfer on to the prepared tray and brush with extra buttermilk. Bake for 15 minutes or until light golden.
