These Lemon heart biscuits would be a fantastic present for mum for Mother's Day or maybe make some especially for her birthday. These have delicious lemon icing and you could add some more patterns to the top if you wish. I kept these ones simple and added some marigold flowers from the garden for decoration.

Lemon Heart Biscuits

Preparation Time: 15 minutes
Cooking Time: 15 - 20 minutes
Makes: 12 biscuits

125g caster sugar
250g plain flour
125 g butter
1 egg

Lemon Icing:
4tbsp Icing Sugar
1tbsp butter
1tbsp lemon juice
Grated zest of one lemon (optional)

Cream together the caster sugar and the butter.

Add the plain flour, and egg and mix together thoroughly.

Roll out the dough with a rolling pin until it measures a thickness of around 5 millimeters.

Roll out the dough

Using a heart cookie cutter, make shapes with the dough and place each one gently on a well greased baking tray.

Place them on a tray

Bake in a moderate oven for 15 minutes or until slightly browned.

Mix together the Lemon icing ingredients and allow the mixture to set in the fridge for half an hour.

When your biscuits are cooled, ice them and present them to mum with some pretty flowers for decoration. Enjoy.
