Baked Tuna & Mashed Potato Patties

Easy tuna & potato patties for a great snack or lunchbox for the kids.



Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes: 6 servings

Ingredients
6 medium-size potatoes
415g can tuna
6 gherkins, finely chopped
1 egg
1/2 cup dried breadcrumbs
coleslaw, to serve
gravy, to serve

Method
Preheat the oven to 180C fan-forced.

Peel and wash the potatoes. Boil the potatoes until soft.



Drain the potatoes and transfer to a bowl. Roughly mash with a fork.



Add in tuna, gherkins, egg and breadcrumbs. Season with black pepper. Mix with hands until well combined.



Shape into patties and place in a baking pan covered with a baking sheet. Spray with olive oil.



Bake in the preheated oven for 10-15 minutes, turning once, until golden brown. Pour gravy on top and serve with coleslaw.
