Easy Peasy Potato Salad

This is a great little recipe that really is easy and it is vegan too. Great for vegetarians, vegans, people who are allergic to egg or dairy and really it is great for anyone. It tastes amazing.

Preparation Time: 5 minutes
Cooking Time: 15-20 minutes
Makes: 6 servings

Ingredients
150g hummus
10 small white potatoes (cubed)
5 large tomatoes (cubed or diced)
2 celery sticks (cut to thin pieces)
Salt and pepper to taste

Method
Steam the potato until soft and tender.



Meanwhile, cut the other vegetables and mix with salt and pepper in a large bowl or container.
Once the potatoes are ready, let them cool a bit and then add to the other vegetables.



Stir in the hummus and serve.
