Wholemeal Pancakes

A low GI, low fat version of a classic.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 6 servings

1 3/4 cup wholemeal flour
3 tsp baking powder
1 cup low fat milk
2 eggs, lightly beaten

Combine all ingredients in a bowl. Make sure there are no lumps in the mixture.

Heat a non-stick pan (to be on the safe side, I lightly coat my pan with sunflower oil with a silicone pastry brush).

Pour portions of the batter into the prepared pan.

When bubbles form and pop on the surface of the mixture, flip them over and cook the other side.

Repeat until the whole batch is cooked, top with whatever you want.

Classic pancake toppings:

- maple syrup
- butter
- strawberries and whipped cream
- jam
- butter and sprinkles
- lemon and sugar

Gourmet/healthier choices:

- fresh fruit and ricotta
- honey/jam and ricotta
- banana and cinnamon
