Vegetable Risotto

Microwave risotto takes 8 minutes and it's bland, boring and never satisfying. With this risotto recipe in 20 minutes you can have a tasty dish and like the microwave stuff you don't have to do a lot of work.

Cooking Time: 15 minutes
Makes: 6

Risotto in a bowl
This risotto can be made with any vegetables you like, but this is how I like it.

2 cups of arborio rice
1 litre of vegetable stock
1 white onion sliced
1 large carrot sliced
2 cups of broccoli florets
1 clove of garlic
Olive oil

In a fry pan add the olive oil and onions.
Grate in the garlic.
When onion starts to soften add in arborio rice and stir to coat with the oil.
Add in the stock, broccoli and carrots and mix well.
If you like your broccoli and carrots still crunchy don't add it in yet.
Place a lid on and cook for 10 minutes.
Take off the heat and stir, test the rice to see if it is cooked. If it is, it's ready.
For crunchy vegetables add them in after 5 minutes and check after the first 10.
When rice is cooked you're ready to serve.

Serve it on top a bread board just in the pan like this and everyone can serve themselves.
