Zoats are zucchini oats, the new health craze taking over Instagram. I like the idea of eating more vegetables and hiding them in everyday meals to make it more nutritious. This is a simple base recipe for zoats, get creative with toppings when you make your own!

Simple zoats.

Preparation Time: 3 minutes
Cooking Time: 5 minutes
Makes: 1 servings

1/2 a grated zucchini
1/3 C rolled oats
1/3 C unsweetened almond milk
1 tsp honey
1 tsp cinnamon
1 tbsp Greek yogurt
1 tbsp peanut butter


Great half a zucchini.

Add to a pot with the rolled oats and almond milk.

Bring to the boil stirring consistently.

Once the liquid has mostly absorbed stir in the yogurt, honey and cinnamon.

Once combined pour into a bowl and top with cinnamon and peanut butter, Walnut Butter or Peanut Butter Dip.

Enjoy as they are or top with banana, seeds and berries.
