Turkey and Egg Scramble

Turkey is one of the leanest readily-available meats out there. Combine it with low calorie eggs and it's a body builder's heaven.



Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
2 Eggs
Diced Turkey Thigh (fillet will do)
Half Tsp Black Pepper
2 Carrots
Tsp Dried Chives
Olive Oil
Tsp Thyme

Method
Peel and slice the onion finely.



Add the onion to a frying pan with a splash of olive oil and leave to cook for 7 minutes on a low heat/until clear (not golden).

'Top and tail' the carrots.



Place the turkey in a bowl and add all the seasoning, ensuring each piece of meat is coated.



Leaving the skin on the carrots grate over the turkey.



Add the turkey mixture to the frying pan. Sear the meat then turn the heat to a simmer.



Add 200ml of water to the frying pan to tenderise the meat. Cover with a lid for 15 minutes.

Place the green beans in a saucepan of cold water, turn the heat to the boil, then simmer for 5 minutes.



The water will have reduced and you should be left with a relatively 'dry' frying pan.



Remove the turkey and greens beans from the heat and plate up.



In the remaining slightly-moist frying pan, scramble an egg for a filling protein-rich meal.

Add the scrambled egg to the turkey and green beans dish and your post-workout meal is served.
