Chicken Yoghurt Dip

This is a delicious dip alternative that is fresh and filling. It can also be used as a tasty sandwich or savoury tart filling.

Preparation Time: 25 minutes
Cooking Time: 10 minutes
Makes: 1 large bowl

400g chicken tenderloins
2 cups of water
1.5 tsp chicken stock powder
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp cayenne pepper
1 tsp crushed garlic
1 tsp curry powder
1/2 cup of spring onions, chopped
handful of baby spinach
250ml greek yoghurt
pepper and salt
1/2 cup grated cheese (optional)

Cut the tenderloins into small pieces.
Seal the chicken in a pan.
Add the water and stock and simmer for 20 mins.

Drain the stock and shred the chicken with a fork.

In a bowl put the chicken, garlic, spices and spinach so the spinach wilts with the heat.

Allow the chicken to cool.
Once the chicken has cooled add the spring onions and yoghurt and mix well. Add cheese too if you have opted to include it.
Season with pepper and salt and serve on a sandwich or with crusty bread.
