Garlic Pot Roasted Chicken

A perfect Sunday roast lunch or dinner for a family of four. Easy to prepare and cook makes it's a great dish for the lazy relaxing weekend.

Preparation Time: 10 minutes
Cooking Time: 1 hour 30 minutes
Makes: 4 servings

1 whole chicken
1 lemon, thickly sliced
12 cloves garlic
8 sprigs thyme
12 chat potatoes
olive oil, for brushing
12 sage leaves
sea salt
1 cup chicken stock

Preheat the oven to 150C.

Wash and dry the chicken and place the lemon, garlic and thyme inside the cavity.

Place in a large ovenproof pot with a lid. Place the potatoes around the chicken. Brush the chicken with oil and sprinkle the sage and salt.

Pour the stock into the bottom of the pot and cover with the lid. Bake for 1 hour.

Remove the lid and bake for a further 30 minutes or until the chicken is golden and tender.

To serve, slice the chicken, place on plates with the potatoes and spoon over the pot juices.
