This recipe features chicken breasts wrapped around cooked fresh asparagus spears, with a slice of mozzarella in between.
It then has a very tasty sauce poured over it before it is all baked in the oven, so no frying.
I have served it on Finy's special rice
and boiled broccoli.

2 large boneless chicken breasts, cut in half
½ cup of good quality mayonnaise
3 tbsp Dijon mustard
1 lemon, zest and juice
2 tsp dried tarragon
Bunch fresh asparagus, trimmed
4 slices mozzarella cheese
¾ cup bread crumbs
