Tangy, creamy and undeniably tasty, this simple laksa recipe is certain to please. Feel free to play with the basic vegetarian version, but chicken or tofu is easily added and suggested below.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 4-6 servings

1 brown onion, chopped
1 tbsp vegetable oil
1 tsp ginger, grated
1 tsp garlic, crushed
1/2 cup quality laksa paste
6 cups vegetable stock
50g rice vermicelli
100g hokkien noodles
1 cup coconut milk
4 baby bok choy, roughly chopped
2 tbsp lime juice
100g bean sprouts
bunch coriander
1 red chilli, finely chopped (optional)

Meat additions
500g chicken breast, cut into strips
500g firm tofu, cut into strips

Heat the vegetable oil over a hight heat, and add the chopped onion, cooking until soft.

Add the ginger, garlic, laksa paste, stock, noodles and coconut milk and mix well. Simmer for 5 mins or until the noodles are cooked.

Add the bok choy (and optional chicken/tofu strips) and simmer for a further 5 mins or until cooked through. Stir through the lime juice.

Serve immediately garnished with the bean sprouts and coriander leaves with a sprinkle of chilli if desired.
