Moroccan Sweet Potato & Chicken Soup

This is winter comfort food at it's best and healthiest. Make the most of delicious sweet potatoes, now in the peak of their season, by combining them with tender chunks of chicken and zucchini - a match made in heaven! You won't be able to resist coming back for more!

Preparation Time: 10 minutes
Cooking Time: 35 minutes
Makes: 4 servings

1 tbsp olive oil
1 onion, chopped
2 celery stalks, chopped
1 garlic clove, crushed
2cm piece ginger, grated
2 tsp ground cumin
1 tsp ground coriander
1/2 tsp chilli flakes
2 chicken breasts, diced
1 sweet potato, peeled and diced
2 carrots, peeled and chopped
2 cups chicken stock
400g can chickpeas
1 zucchini, diced
2 tbs lemon juice
1/4 cup coriander

Over a medium high heat, heat the oil in a large saucepan or pot.
Add onion, celery, garlic and ginger and cook for about 3 minutes.

Add the cumin, ground coriander and chilli flakes, stirring briefly before adding the chicken. Cook until fragrant.

Add the sweet potato, carrots and stock, and bring to the boil.
Reduce to a low heat and let simmer for 20 mins.

Finally, mix through the chickpeas and zucchini, allowing to cook until tender, then combine the lemon juice and coriander to the soup.

Divide among four bowls and serve warm.
