Surprise Honeycomb Cake

Looks like an ordinary cake on the outside but when you cut it in half, you will see why this honeycomb cake will definitely give everyone a surprise!

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 4-6 servings

1 egg
2 tbsp honey
4 tbsp condensed milk
50g unsalted butter, melted
Pinch of salt
50g plain flour
1 tsp bicarb soda
1 tsp ground cinnamon

40g sugar
90ml water

Preheat oven to 200C, grease and line a cake tin.
In a saucepan dissolve the sugar in water over medium-low heat.
Gently stir until dissolved and set aside.

In a large bowl whisk the egg and add in the condensed milk.
Add in the honey and salt, whisking gently.

Add the melted butter and whisk until ingredients are well combined.
Sift the flour, bicarb soda and cinnamon into the wet mixture.

Whisk the ingredients until it all comes together.
Pour the syrup into the mixture and combine well.
Cover the mixture with plastic wrap and refrigerate for 15 minutes for it to set.

When ready, remove the mixture from the fridge and pour into the prepared cake tin until 3/4 full.
Bake for 20 minutes.

Remove from the oven and cool for 2 minutes.
Cut in half and serve.

Note: I used a 12 centimetre cake tin and a small loaf tin. You can always double the ingredients when using a larger tin.
