Honey-Soy Chicken Stir-Fry

Quick and easy, this dish is the ideal week night dinner.



Since I'm cooking for two people, I only use one chicken breast and one packet of noodles but feel free to use as much as you like!

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
1 chicken breast, cubed
1 packet thick Hokkien noodles
1/2 brown onion, diced
2 cloves garlic, chopped finely
2 chillies, chopped finely
1 carrot, sliced
Handful snow peas, topped and tailed

Sauce:
4 tbsp honey
2 tbsp soy sauce
1 tbsp lemon juice
1 tbsp plain flour
Teeny, tiny splash boiling water

Method
To make the sauce, combine all ingredients in a bowl and whisk well. Taste, ensuring that the sauce is equally sweet, salty and sour.

In a large wok, heat a splash of oil and stir-fry the onion, garlic and chillies for a few minutes until onion is soft.

Add chicken and fry until sealed.

Add carrot and snow peas, cook until chicken is white all the way through.

Finally stir in noodles and sauce, stirring until sauce thickens.

Serve hot.
