Haloumi and eggplant stacks
This is an easy recipe to make and is sure to impress.
The flavours of haloumi with the eggplant and two different coloured capsicums marry very well together.
They could be eaten as a snack however they are quite filling. They could also be used as an accompaniment/vegetables to a meal, as long as you only serve one to each person.

1 Eggplant, cut into about 1 cm slices
½ garlic clove
1 tbsp olive oil
1 large red capsicum
1 large yellow capsicum
120 g Haloumi cheese
1 tbsp Pistachio Dukkah -optional
Crusty bread to serve -optional
Basil leaves, to garnish -optional
Capsicums have now had the skin peeled off
