Chicken with Carrot, Pear & Apple Balls
Delicious chicken meatballs with sweet & juicy apple and pear make this a great snack for a fussy eater. It is also great for picnic.

2 skinless chicken breast fillets
1 carrot, peeled
1 apple, peeled
1 pear, peeled
1 onion, diced
a handful coriander
1 tsp salt
1 tsp black pepper
Heat oil in a frying pan, saute the onion until soft. Set aside to cool.
Grate the carrot. Set aside.
Grate the apple and pear. Squeeze out excess juice. Set aside.
Blitz the chicken and coriander in a food processor.
Mix the processed chicken with sauteed onion, grated carrot, apple and pear. Season with salt and pepper.
Shape the mixture into 30 balls.
Heat oil in a frying pan, pan fry the meatballs in 3 batches until outside is golden brown and inside is cooked through.
Serve warm or cold with sweet chilli dipping sauce.
