Milk Chocolate Cake

This delicious Milk Chocolate Cake actually requires no animal products. Ridiculously simple to make, tasty and perfect for children's parties!

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 12 servings

For the sponge
3 1/2 cups self-raising flour
2/3 cup of dairy milk drinking chocolate
2 cup caster sugar
2 teaspoons baking powder
teaspoon salt
1 cup unsweetened almond milk
1/3 cup vegetable oil
1 teaspoon vanilla essence
2 tablespoon white vinegar

Buttercream icing filling
2 cups of soft icing sugar
cup of dairy milk drinking chocolate
1 tablespoon of unsweetened almond milk
1 cups of dairy free spread

2 cups of soft icing sugar
cup of dairy milk drinking chocolate
2 tablespoons of almond milk

Pre-heat an oven to 180 degrees and grease and line with grease proof paper two cake tins of the same size.

In one large bowl place all the dry ingredients for the sponge and mix thoroughly. In another large bowl, mix together the wet ingredients.

Create a small well in the dry ingredients and pour in the wet mix. Mix until thoroughly combined.

Pour the mixture evenly into the two lined cake tins and put in the oven, bake for approximately 25-30 minutes. Once baked, the cakes should only just start to brown on top and when pricked come out clean.

While the cake is baking you can make the buttercream icing filling and icing for the top of the cake.

In a medium size bowl, place the dairy free spread and unsweetened almond milk and cream together with a fork. Once creamed together, slowly and the icing sugar and dairy milk drinking powder and mix together thoroughly until all has been mixed in together.

In a small bowl, place the soft icing sugar, dairy milk drinking chocolate and almond milk. Mix together thoroughly.

Once your cake mixture is baked, remove from the oven and place on a wire rack to cool. Once cooled you are ready to ice the cake.

Place one of the cake sponges on a plate, and using a butter knife or small spatula, spread the butter cream icing.

Once this has been done, place the second sponge directly on top and follow the same procedure to ice the top of the cake.

Decorate how you would like and enjoy!
