1 tbsp olive oil
2 cloves garlic, crushed
2 leeks, halved lengthways and sliced into 2cm chunks
4 celery sticks, roughly chopped
4 carrots, halved and cut into large pieces
3 bay leaves
2 large sprigs thyme
750ml chicken stock
2 tsp dijon mustard
500g chicken breasts, cut into bite sized chunks
2 spring onions, roughly sliced
400g can brown lentils, rinsed and drained
bunch coriander, roughly chopped (to serve)
