Sweet Potato Mash

A colourful and healthier alternative to the family favourite that complements chicken, pork or fish well.

Sweet potatoes are packed with a range of vitamins and minerals - including vit C, vit B6 and magnesium - that normal potatoes lack, so it is a great idea to substitute this easy recipe in every now and then.

Preparation Time: 2 minutes
Cooking Time: 5-10 minutes
Makes: 4 servings

800g sweet potato, peeled, cut into 2cm chunks
2 tsp ginger, grated
2 tsp butter (I use coconut oil here instead)
1 tbsp chives, finely chopped

Place the chopped sweet potato in a microwave dish with 2 tbsp water, and cook until the potato is tender (this is about 7 mins for me on high).

Drain the excess water, then add the ginger, butter and chives and mash until smooth. Serve immediately as a side to a main dish.
