Looking for a light, healthy meal and seafood is your preferred choice, than try this recipe. Part of the 5.2 diet menu, this meal combines the traditional white fish with roasted vegetables.
This colourful meal is great for those peaceful days, sitting on the porch, looking over the water with a glass of white wine and at 225 calories per serve, it is one less thing to worry about.

Roasted Fish with Vegetables
Preparation Time: 15 minutes
Cooking Time: 35 minutes
Makes: 4 servings
Ingredients
600 grams of White Fish (4 fillets)
4 slices of Parma Ham
1 Red Pepper
1 Yellow Pepper
2 Zucchinis
2 Red Onions
10 grams of Parmesan Cheese
10 grams of Breadcrumbs
1 Teaspoon of Olive Oil
2 Tablespoons of Parsley
Method
Pre-heat the oven to 200 degrees.
Cut the peppers, onions and zucchini and place into a baking tray. Drizzle with oil and sprinkle with a pinch of salt and pepper.

Vegetables chopped and placed in dish
Place the vegetables in the oven and roast for 20 minutes.

Vegetables roasted.
Wrap the fish with the ham.
Mix the Breadcrumbs, Cheese and parsley together.

The other Ingredients, Fish wrapped and mixture.
Place Fish on top of the vegetables and sprinkle mix over the top of the fish.

Fish placed, mixture sprinkled over the top.
Cook the fish for 12-15 minutes.
Once cooked; serve, relax and enjoy.
