Vegetarian Carrot & Potato Fritters

Carrot & Potato Fritters are easy to make and are a delicious and healthy breakfast or lunch option at home. Made with the essential ingredients that you can easily find at home, you can step away from your computer and start cooking right away!

Makes: 8 servings

2 large carrots
1 large potato
1 cup plain flour
cup milk
1 egg
1/3 cup fresh basil, chopped
cup grated cheese
Salt and pepper to season
Olive oil to shallow fry
Mayonnaise to serve

Coarsely grate the carrots and potatoes.

Lightly squeeze out the excess moisture with your hands and combine together the carrot and potatoes on a clean plate.

Sift flour into a large bowl and season with salt and pepper.

Combine the ingredients and make a well in the centre.

In another bowl, whisk together the milk and egg.

Pour into the flour mixture and stir until smooth.

Add the carrot, potatoes, basil and cheese and combine well.

Heat oil in a large fry pan over medium heat.

Gently place large spoonfuls of the fritter mixture into the pan.

Cook fritters 3-4 minutes on each side or until golden.

Remove to a plate or wire rack to drain.

Serve warm with a dollop of mayonnaise.
