I've been making a lot of quiches, pies and tarts recently and love making my own pastry. Most people think pastry is hard to make and opt for store bought. This simple pastry recipe is fool proof. It is buttery, crisp and deliciously salty.

Baked Pastry

Preparation Time: 30 minutes
Cooking Time: 30 minutes
Makes: 6 servings

2 cups plain flour
120 g unsalted butter - room temperature
1 tsp salt
6 tbsp cold water

Place flour, cubed butter, salt and water in a bowl and knead until combined.

Roll dough into a ball, cover the bowl with cling wrap or a clean tea-towel and place in the fridge for 30 minutes.

Place dough onto a floured bench and roll out until desired thickness. I find it helps to roll it next to the dish I'm baking in to get a good idea of size and shape.

Place pasty in a well oiled dish and remove any overhang. Prick the bottom with a fork a few times and place in a 180C oven for 20 minutes or until starting to brown.

Your pastry is now ready to be filled with quiche mixture, vegetables, pie mix or anything else you desire.
