These bites are great for an easy meal, nice cold for lunchboxes or work lunches, and very versatile.

Cook these up and serve them with vegetables or salad.
I didn't precook the broccoli as it cooked quite fast in the oven but some other vegetables might need to be precooked.

: 25 minutes (plus time to cook quinoa and sweet potato)
: 12 muffin size portions
400g sweet potato
3/4 cups uncooked quinoa (I used white but you could use any variety)
1 cup broccoli cut up small
1tsp vegetable stock powder
1 1/2 cups grated cheese (or more if you want it extra cheesy - less if you want to be healthier)
1 tsp paprika (optional)
1/4 tsp chilli flakes (optional)
Salt and pepper to taste
