50/50 White Rye Bread

50 50, rye bread, white bread


You're probably al familiar with Kingsmill's 50/50 - white bread with all the goodness of brown. Well, I decided to do my own version; one that looks far more interesting. In this 50/50 bread, I've combined white and rye loaves to create a contrast in both taste and appearance.

Preparation Time: 1 hour 50 minutes
Cooking Time: 40 minutes
Makes: 1 loaf

Ingredients
250g rye flour
250g white bread flour
2 tsp fast action yeast
1 tbsp date syrup
1 tbsp caraway seeds
300ml water (add more if needed)
tsp salt

Method

Mix the rye flour, caraway seeds, date syrup, 1 teaspoon yeast, teaspoon salt, and 125ml water to form a dough.

Mix the white bread flour, 1 teaspoon yeast, teaspoon salt, and 125ml water to form a dough.

Knead both doughs separately for 5 - 10 minutes each.

Allow each dough to prove for about an hour.

Divide the two doughs into 2 - 3 pieces, and layer them alternately in a loaf tin.

Leave to prove for half an hour.

Bake in an oven pre-heaed to 220 ༠C/ 200 ༠C fan/375 ༠F/6 Gas.
