Oats and Peach Bars - Sugar Free

I have been buying a lot of bars recently so that I do not eat junk when I have some snack cravings. Most of the bars I had, consisted of oats and then there was a variation when it comes to fruits. I realized I had big box of oats lying on my shelf and if I make my own bars at home, I would definitely know what goes in there and I can even make them completely sugar and butter free!

So here is a quick recipe of a breakfast bar with oats, peach puree and then some other ingredients, which can be completely, changed depending on your choice of fruits or nuts.

Preparation Time: 30 minutes
Cooking Time: 30 minutes
Makes: 6-7 bars

Ingredients
Butter to just grease the pan.
1 cup peach puree
2 eggs
1.5 cup rolled oats
0.5 to 1 cup prunes
0.5 to 1 cup dried sugar free apricots or any other dried fruit of your choice
4 Tbsp. chopped almond
0.5 cup plain flour
1-teaspoon ground cinnamon

Preheat Oven to 180 degree.

Prepare peach puree if you are making it fresh. You can also use a store bought one but that might have sugar in it. I used 2 peaches, peeled them and blended them for a cup of peach puree.



Add 2 eggs to this puree and whisk it well.



Add rolled oats and keep mixing.



Now is the time to add fruits and nuts of your choice. I have added prunes, dried apricots and chopped almonds.

Add all-purpose flour and cinnamon. Fold the mixture properly.



Transfer it to the greased tray. Please note that it should not be runny. The mixture should be thick.



Place the tray in oven and bake for 20 minutes and until the upper crust starts looking somewhat brown. Do a toothpick test and see if it is done.

Once done, cool it down. Cut it into bars, and store the bars in airtight containers.
