These crispy balls are a cross between an LCM bar and peanut butter - but healthy. The puffed rice balls are crunchy, peanut-buttery, and bite-sized perfect for packing in lunch boxes or for satisfying a sweet tooth. You could press into a tin and make bars but I love having perfect bite sized balls.

Preparation Time: 25 minutes
Cooking Time: 0 minutes
Makes: 12 servings

1 cup puffed rice
3 tbsp honey
1/2 cup crunchy peanut butter or walnut butter
10 cashews
1 tsp. vanilla extract

In a medium bowl, mix together the peanut butter, honey, and vanilla essence.

Add in the puffed rice and chopped cashews and stir together.

Once combined refrigerate the mixture for 10-15 minutes, this makes the mix easy to roll.

Remove from the fridge and start rolling tablespoon sized balls. You should end up with around 12 depending how many you eat whilst making.

Keep in the fridge if they don't all get eaten!
