For this decadent dessert recipe, Australia meets Italy with native macadamia nuts and a Tuscan festive fruit cake. A traditional panforte recipe would not use macadamia nuts and is a heavy, chewy, spicy, sweet treat, reputedly used to keep the Crusaders going. This Aussie macadamia panforte makes an excellent home made edible gift, and best of all, you can prepare it weeks in advance to really enhance the flavors.

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 16 thin slices

1 1/2 cups nuts (macadamias, almonds, cashews etc)
1/2 cup plain flour
2 tablespoons cocoa powder
1 cup candied citrus peel (or sultanas)
2 teaspoons ground ginger
1 teaspoon freshly ground black pepper
1/2 teaspoon grated nutmeg
1/2 teaspoon chilli powder (optional)
100 grams dark chocolate
1 cup caster sugar
1 cup honey
Icing sugar (for optional dusting)

Line a round tin with baking paper and lightly dust with cocoa powder.

Line the tin and dust it with cocoa

Mix together the cocoa, macadamia nuts, flour, fruit and spices.

Melt the dark chocolate in a bowl over simmering water, then add the caster sugar and honey. Mix well.

Add the melted chocolate mixture to the macadamia nut mixture and stir thoroughly.

Carefully spoon the batter into your prepared tin and bake in a moderate oven for 40 minutes.

Let it cool in the tin

Allow the panforte to cool completely in the tin, before sprinkling the top with sifted icing sugar.

Serve in thin slices with an espresso (or maybe with ice cream). Or present it in a pretty box as a gift for someone special (just make sure you warn them that it is a little bit spicy).
