Very easy to make and, with cheap ingredients, it's easy on the family food budget too! Packed full of flavour, it will make a great addition to your recipe book.

500g low fat pork mince
2 small onions or 1 large onion
Only 5 ingredients!
I use homemade gammon stock in this recipe, so no other flavourings or spice are needed. However, if you don't have any homemade stock handy, substitute water and add 4 cloves, 2 bay leaves and a handful of peppercorns.
During cooking, the pork will release juices into the stock - don't be alarmed if it turns milky. This is quite normal!
Ready to serve
Serve with mashed potatoes or rice and enjoy!
Replace the peas and carrots with celery and cabbage for a variation on this casserole. You could also add diced potatoes to save on cooking them separately!
