Blueberry Chia Jam

Jam is cheap to buy but making it yourself is easy, satisfying and more gourmate. This beautiful blueberry jam uses chia seeds instead of excess sugar or agar to set and is healthy but still sweet. Enjoy on scones, toast, stired through yogurt or as a filling for a pie



Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 12 servings

Ingredients
300g blueberries
1 tablespoon agave nectar
1/2 lemon juiced
1 teaspoon vanilla extract
1 1/2 tablespoon chia seeds.



Method
Combine the blueberries, agave, lemon juice and vanilla in a pot.

Simmer over a low heat for 5 minutes or until a syrup forms.



Pour in the chia seeds and stir through. Once incorporated remove from the heat and pour into a steralised jar.



Allow to stand for 1 hour in the fridge to set before eating.

Enjoy on toast with peanut butter, on pancakes, scones, in muffins or stir through yogurt.



NOTE: feel free to blend the jam. I love the bursts of blueberry but a smooth jam is also a great option.
