Apples are not usually filled as a savoury dish, as it is usually capsicum or tomatoes or similar, but in this recipe, I have used ingredients that are not ones often mixed together!
The result is a surprisingly refreshing, and tasty mix of salty and sweet tart apples, and I used Pink Lady apples for this recipe.
I ate them as a main meal however they would be good as a meat accompaniement.

Few pieces of lemon or juice
4 rashers short cut bacon (little fat)
1 small onion or shallot
1 clove garlic
1 tblsp chopped sage
1 medium to large potato, peeled
½ tbsp cider vinegar
