Healthy Thai Meathballs

Great for entertaining or for an easy dinner served with a fresh slaw. You can easily adapt the ratio of ingredients and size of meatballs to suit your liking.

Preparation Time: 30 minutes overnight (optional)
Cooking Time: 30 minutes
Makes: 44 meatballs

1kg pork & beef mince
1 red onion finely chopped
20g coriander (including stalks) finely chopped
zest of one lemon
1 chilli finely chopped/crushed
1 tbsp crushed garlic
3 tsp ground cumin
1 tsp chilli garlic sauce
1 tsp tandoori paste
2 tsp garlic salt

Combine the chopped onion, coriander, chilli and zest with the mince.
Add the garlic, paste, spices and combine.
Cover and refrigerate mince to allow flavours to intensify overnight (optional).

Preheat oven to 180 degrees (fan forced).
Roll meatballs into desired size. I made them small and yielded 44, but you could make them larger for a meal.

Place on tray and bake for 30 minutes or until cooked through.
Serve with a dipping sauce of soy, kechap manis, lime and sweet chilli to desired taste.
