Vegan Basil Pesto

Who said you couldn't enjoy pesto as a vegan?

Here we have a beautifully fresh and light vegan pesto that can be used on anything from pasta to salads to soups to sandwiches.

The cashews give it that thick, creamy texture, without adding the fats or salt of cheese. An all-round winner!

Preparation Time: 5 minutes
Makes: 1 heaped cup

2 cups loosely packed basil leaves
1/4 cup cashews
1/4 cup walnuts
1/2 cup pine nuts
2 cloves garlic
1/4 cup extra-virgin olive oil

Blitz basil, cashew, walnuts, pine nuts and garlic in a food processor until a fine crumble has formed.

Drizzle over oil while mixing until a smooth, consistent pesto has formed.
