Breadmaker Pumpkin Loaf

Nothing works quite so well to warm you in winter as freshly baked bread and when you add the rich sweetness of pumpkin you're onto a winner.

So dust off your breadmaker and get into this foolproof recipe.

Preparation Time: 15 minutes
Cooking Time: 4 hours
Makes: 1 large loaf

1/2 cup milk (potentially plus 2 tablespoons)
1 cup mashed pumpkin
4 cups bread flour
2 tablespoons olive oil
2 tablespoons sugar
1 1/4 teaspoons salt
2 1/4 teaspoons dry yeast

Thoroughly cook your pumpkin either on the stove or in the microwave until it's practically falling apart. Any firm parts wont have the deep flavour that you're after.

Add all wet ingredients to your breadmaker bowl then top with the dry ingredients. Dont mix. If your pumpkin is more like a mash than a puree, add two tablespoons more of milk.

Set your breadmaker to a four hour cycle with a medium brown crust.

Turn the hot bread out onto a board and let it cool and steam for at least ten minutes before slicing.

Especially good under homemade chilli or baked beans.
