My sweet tooth is really in overdrive these days but instead of reaching for a croissant or hot chocolate at breakfast I've been reaching for fruit. Making 'nicecream' is one of my favourite snacks and this raw breakfast parfait combines the sweetness of 'nicecream' with the goodness of chia seeds and nut butter.
Enjoy dessert for breakfast with this gorgeous and healthy parfait.
These can be made a day or two ahead and be kept very cold but they are a cinch to make so I make this fresh before devouring.

2 tbsp. chia seeds
3/4 cup water (or milk)
1 kiwi fruit
Layer two - nicecream
1.5 bananas - frozen
Handful of berries
1 tbsp. peanut butter walnut butter
