Bacon and Eggs on Toast with Fried Potatoes

This is a quick, easy way to make the best bacon and eggs for that leisurely breakfast.

I have added a potato made into chips to vary it a bit.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 1 serving

1 large egg
2 - 3 rashers shortcut bacon
1 Kipfler potato
Piece rye bread

Fry the bacon for about 5 minutes, turning once or twice till it begins to brown - I like the bacon very crispy so fried it a bit longer.

Meanwhile, if making the potato, microwave it whole for about a minute.

Cut the potato into chip shapes of your choice, and add to the pan.


Put your toast in the toaster.

Add the egg to the pan and cook to your liking or about 2 minutes for a soft yolk.

Butter your toast as this adds to the flavour.


Put the eggs, bacon and potato on top of the toast, decorate with parsley if desired, and serve.
